COOK AT HOME
Fresca classics to cook at home. Each set feeds two and includes the following.
+ Fresh Semolina Spaghetti (250g)
+ Grana Padano Cheese (35g)
+ Ragu/ Wild Garlic Pesto/Carbonara Paste
This weeks sauces are a seasonal Wild Garlic Pesto (nut free), everyone’s favourite Fresca Ragu made with a blend of cured meats, pork and beef and a DIY Carbonara Kit.
HOW TO COOK:
+ Boil pasta in salted water for 3-4 mins.
+ Drain pasta and reserve cooking water.
Mix the cooked pasta and pesto in a large bowl. Add some of the reserved cooking water to loosen the sauce to your desired consistency. Taste, adjust seasoning and enjoy.
Heat ragu in a large pan over medium heat until just simmering. Once pasta is cooked, add to the pan with 4tbsp of cooking water. Toss or stir the pasta until sauce thickens and becomes slightly creamy. If it becomes too thick, add some more cooking water. Taste and adjust seasoning. Finish by melting a knob of butter through the pasta for extra indulgence.
